Lawrie I think you're quite right - we now have :- "burning
cardboard" (sulfurous-gassing glue probably) plus "rotten
eggs/rotten cabbages" - from many modern sightings/contacts,
plus "freshly broken hot coal" (seem to remember _that_ smells
sulfurous too) from recent history, plus innumerable "sulfur"
reports from the past [plus of course the "sulfur and brimstone"
from ancient past].

We humans eat many chemicals (and we can produce sulfurous
gasses as a result - see beans & brassica again), although our
basic life-process is `carbon-oxygen' - but we don't have to eat
coal or diamonds.

Others could also be `carbon-oxygen' with slightly more sulfur
producing elements - or maybe alternative process based on
`iron-sulfur' - although they wouldn't have to eat metals.

Why aren't the chemical traces (smells) involved in
sightings/contacts being checked out? Maybe the establishment
already knows the facts?
